Lime Chili Rice


  • 1 small can of chopped green chilies
  • Juice of two limes about 1/4 cup
  • 1/4 chopped fresh cilantro
  • 1 1/2 cups rice
  • 2 cups water


Place water & lime juice in saucepan and bring to a boil.
Add chillies, rice and cilantro to water. Reduce heat to medium low and cook for 20 minutes or until water is absorbed by the rice.
